About
店についてSushi and Japanese cuisine.
A father's and a son's experience, brought together in one omakase.
Born and raised in Nihonbashi Hamacho, in the heart of old Tokyo, the chef makes sushi with deep respect for traditional Edomae craft. In the kitchen, his father, whose cooking is rooted in Japanese cuisine, supports every course.
The son focuses on the fish and the sushi; the father builds the seasonal ingredients and the flow of flavors. Not only the sushi, but the small dishes, the soup and the tamago are composed so that each plate and each piece leads naturally to the next. An omakase that only a father and son could create.

Omakase
おまかせNot showy.
Flavors that deepen quietly with every bite.
Our shari (sushi rice) is seasoned with rice vinegar as its base, with a clear balance of acidity and salt. Honoring traditional Edomae techniques, each piece is prepared with care.
Our signature piece is the amaebi (sweet shrimp). Prepared in a way unique to Shishi, it brings everything the shrimp has to offer into a single bite.
Omakase Course (Dinner)
Crafted by a true Edokko born in Nihonbashi Hamacho, this course brings out the pure flavors of the ingredients, presenting the taste of Tokyo in a straightforward and authentic style. A course that satisfies with both appetizers and sushi.
Saturday Chef's Selection (Lunch)
Enjoy a leisurely afternoon with exquisite flavors. The course is the same as on weekday evenings.
Prices include tax and service charge. When booking through OMAKASE, the course fee is paid in advance; any additional orders, such as drinks, are settled at the restaurant on the day. Prices may vary depending on market conditions.
Sasa-giri and sushi rolls to finish
Craft
手仕事Sushi rolls and sasa-giri:
traditional handwork we hold dear.
We value not only flavor, but also the extra effort and beauty in every detail. Our kanpyo (dried gourd) is carefully simmered and rolled to bring out its natural taste. Sasa-giri, bamboo leaves hand-cut into decorative shapes, are made one by one to suit the season and the dish.
Not flashy, but dishes that show the accumulation of handwork.
